The privately-owned Grade II Victorian Villa has recently been renovated with a £5m investment which means they have literally thought of everything in order to establish their green status.From the intelligent low-energy lighting system and the UK-made on-site electricity generator to the 100% UK wool fabrics woven on the isle of Bute, they’re proving that eco-consciousness and luxury can co-exist – even the company car runs on recycled vegetable oil!

The nine-course taster menu is a romantic indulgence not to be missed and gives you a chance to try all the chef\'s specialities (including the eel, served with a hint of lime and salted potatoes – and yes, it was much better than it sounds!) The food served is sourced within a 30-mile radius of the hotel, and is organic or homegrown, wherever possible to keep with their sustainability ethos. \r\nKey to the menu is the melt-in-the-mouth scallops and the two desserts; a gorgeous toffee panna cotta and a delicious bitter chocolate mousse and shortbread.
